CAPITAL
COOKING EQUIPMENT
866-402-4600
Upstart maker of pro ranges, and BBQ
2006 Kitchen & Bath Show Introductions
Precision Series all gas range, self clean. 19, 19, 19, 19, 25K BTU. These
are very very powerful 5 burner 30" ranges that Capital is promising.
Further the promise is that the BTU of these "Power Flo" burners are
not nearly half of the story, as Capital is promising that the actual heat
transmitted to the pot is more efficient, and therefore faster than any gas
burner we are aware of, much faster.
Expected to be launched Q1, 2007, we are anxious to see what these things can
really do.

30K BTU Wok
Do you notice the 1" cast iron wall on the lower left side of the image,
which is the side you cook on? That is there to reduce flame on that side,
and cut down on the number of folks who could get incinerated using it. We
wonder if this will be more powerful than the Thermador 30K BTU Wok

Oven Rotisserie
Is this really the only one of these. This is brilliant. If this can
make a chicken look even 1/2 as good as the plastic chicken used at the show, we
want one. This is a fantastic idea.

New 30" all gas range with fixed in place middle griddle plate. A
pro-style copy of an idea we first saw on the 2004 GE gas range.

New Performance Series BBQ
These huge 30", 40", 52" wide BBQs are styled along the lines of
any of the very high end BBQs from Viking, Thermador, DCS etc. They are
marketing some feature called a "Sear Zone" which to us is like
identifying the "Up" zone on an elevator....No? Also features
stainless steel grates and the new "must have", internal lighting. We feel
that the light feature is poorly executed, as it seems to be right there in the
fat and splatter, more poorly located than Dacor's and no comparison to the
brilliant DCS BBQ light solution.

This is One Hood You Couldn't Pick From a Line-Up
Capital continues to steer its design down the middle of the road, trying to
piss off as few people as possible. The range hood is no exception.
600 and 1200 CFM blower performance, 250W warming lamps, halogen lamps, baffle
filters, packaged in a generic stainless steel canopy.

2002 Kitchen & Bath Show Introductions
For a start-up, they certainly seem to have a lot of products
The BBQ Line
Two new models. 26" and 32" free standing gas BBQ, made with
304 stainless
steel, porcelain grates, 2 "U" shaped stainless burners
@20,000 BTU each, battery powered electronic ignition, and double wall stainless top
which
they promise will keep the outer layer from turning purple from the heat. The
32" unit also has a 15K BTU Infra Red burner and a 10K BTU side cooktop
burner and can be purchased with an optional cart or a 15K BTU side
burner.

The Pro-Style Cooking Line
24" and 48" all gas pro ranges in 304 stainless steel with 16K BTU open
surface burners and roll out drip tray.
The 48" sports both a 4.55 cu ft and a 2 cu ft oven. The larger
convected oven features 30K BTU burner with an 18K Infra Red broiler. The smaller oven
features a 15K BTU burner. The 48" range is available with 4 to 8
surface burners with the standard options of griddles, grills or both.
The 24" sports a 22K BTU oven with a 15K BTU Infra Red broiler. If their
claims are true, the 24" seems to be the highest performing 24" on the
market, with (4) burners with just a little bit more power than the new Viking 24" range.
